1/4 small red cabbage
4 tbsp cider vinegar
2 tbsp sugar
+ salt, bay leaf, dried orange peel, ginger
Cut the cabbage into thin stripes and place it in a pot. Add salt, sugar and vinegar. Then add enough water so that approximately a half of the cabbage is covered by it. Remove the stones from the plums. Cut the plums into small pieces and add to the pot. Cook on low till medium heat until the cabbage is soft and almost no water is left in the pot. You can add some ginger or dried orange peel to achieve more complex flavour.
