1 tsp salt
2 tsp gochujang paste
2 tsp sugar
2 tsp rice vinegar
2 tsp sesame oil
1 tsp crushed garlic
1 tsp black sesame seeds to garnish
Half the cucmber lengthways and cut into very thin half moons. Add salt and set aside for 30 min. Combine the remaining ingredients into a sauce. Squeeze the cucumbers getting rid of excess water, then stir in the sauce. Marinate for 30 min. Garnish with sesame seeds. Serve cold.
Cucumbers consist to 95% of water. Adding salt to cucumbers soaks all the water from the cells making space for the delicious sauce.
